Discover this amazing spice; These are small finger limes from our Swiss production that we first worked in brine then smoked with lemon wood and finally dried for long storage. On the first palate, we find slightly saline, almost iodized notes then the flavors of finger lime come in power, accompanied by light smoky and toasted notes on a barely tart base.
This astonishing aromatic complexity goes well with both sweet and savory, the small smoked finger lime should be grated with a microplane or preferably reduced with a mortar.
We have tested it in several ways; just grated with a microplane on buttered tagliatelle with bottarga, or reduced to a fine powder on fresh cheese ice cream accompanied by citrus confit à la minute. In a more classic way too, grated on scallops just snaked with a drizzle of sesame oil. This is something to surprise your taste buds and your guests.
