This is the traditional lime. Its zest and juice lend flavour to all sorts of savoury and sweet dishes. The sourness of its juice “cooks” tartares, ceviches and fish and scallop carpaccio. It also stars in several cocktails: mojito, caipirinha, Ti’ Punch, etc. Combined with coconut milk or soy sauce, it brings a welcome touch of exoticism.
