This little citrus of Australian origin has reigned supreme over the greatest tables for a number of years already. It is becoming popular today and is accessible to a wider audience. Here it is offered in different shapes and colours, notably with pink, green, yellow, red or white pulp. It also exists as a highly fragranced lemon caviar hybrid, the famous faustrime with notes of citronella and pulp resembling plant caviar but shaped like rice grains.
Lemon caviar generally available in October and November and faustrime from October to March.
